This delicious Caprese salad bursts with the flavours of tomatoes, fresh mozzarella and basil. The recipe is easy to make and serves as a perfect side to any meal or a great lunch all on its own—add your favourite olives, mushrooms, or other vegetables and enjoy!


Option 1. Ingredients: Make your own reduction


Option 2. Ingredients: Balsamic Glaze - the easy method.

  • ½cup black garlic balsamic glaze (use as much as you like)

  • ¼ cup extra virgin olive oil

  • 2-3 large tomatoes, cut into ½-inch slices

  • 1 16-oz. Package of fresh mozzarella, cut into ¼-inch slices

  • ¼ teaspoon fresh ground tri-colour pepper

  • ½ cup fresh basil leaves



Method:

  1. Option 1 Method: For making your own reduction: Stir honey and black garlic balsamic vinegar together in a small saucepan over high heat. Bring to a boil, reduce heat to low, and simmer for about 10 minutes. Set aside to cool.

  2. Option 1 and 2 Method: Arrange slices of tomatoes and mozzarella on a plate, layering basil between them. Sprinkle with salt and pepper to taste. Drizzle with the balsamic reduction (or the balsamic glaze) and olive oil.

  3. Serve immediately.


3. Rustic Black Garlic Balsamic Chicken

Turn chicken breast into a unique and hearty meal. Let the sweet and tart flavour of the black garlic balsamic vinegar bring out the complex tastes of the other ingredients.



Ingredients:

  • 2 boneless skinless chicken breasts

  • 2 tablespoons avocado oil (substitute with coconut oil)

  • ¼ teaspoon fresh ground tri-colour pepper

  • ¼ teaspoon cayenne powder

  • 3 medium tomatoes, quartered

  • 1-2 cloves organic black garlic, sliced

  • 1 Tablespoon butter (optional)

  • 2-3 handfuls of fresh spinach - optional (blanched or steamed to preference) or bed of rice




Method:

  1. Marinate the chicken breast with 2 tablespoons of balsamic vinegar for at least 30 mins. Sprinkle some pepper and salt on the breast.

  2. Add 2 tablespoons of avocado oil to a pan over medium-high heat and swirl around.

  3. Add chicken breasts. Reduce heat to medium.

  4. Place the lid over the top of the chicken breasts for 4-5 minutes.

  5. Flip chicken breasts, and season with the remaining salt, and pepper.

  6. Replace the lid and cook for another 4 minutes.

  7. Reduce heat to medium-low. Add tomatoes.

  8. Add black garlic, cayenne pepper and remaining black garlic balsamic vinegar and ⅓ cup water. Cover, and simmer over medium heat for about 2-5 minutes or until tomatoes are tender.

  9. Add butter to enhance the richness of the sauce - optional.

  10. Serve over a bed of blanched or steamed spinach or rice. Drizzle the remaining balsamic sauce from the pan.
